On a lighter note

Specifically 6.8 pounds and 7.5 inches lighter after four weeks!   Enjoy a celebratory random post of the lighter and fun things in my life lately.

Cauliflower
We enjoyed two healthy cauliflower recipes in the past few days.  Let me know if you try either one of these!  I would love to hear your feedback/comments.

Oven Roasted Cauliflower
(recipe courtesy of 5 in 1 meals - a great side dish)
4-5 cups cauliflower florets
1/4 cup olive oil (I used less)
3 t minced garlic
2 T lemon juice
salt and pepper to taste

Place florets in a large zipper bag.  Add next 4 ingredients, zip and squich around to mix.  This can sit in the fridge for several days.  When ready to bake, roast in 400 degree oven for 20-25 minutes.  Sprinkle with 2 T grated parmesan cheese.

Buffalo Cauliflower
(recipe courtesy of Pinterest and my mind - a great way to get the Buffalo wing taste without the Buffalo wing calories)
2 heads cauliflower cut in to florets
olive oil, garlic powder, onion powder, salt and pepper, seasoned salt (what ever proportions taste good to you)
bottled Buffalo wing sauce of your choice (I used Sweet Baby Rays)
blue cheese salad dressing

Place florets in large zipper bag.  Add oil and spices and squish around to mix.  Spread out on cookie sheet and bake in 400 degree oven for 20 minutes.  Remove from oven and squeeze Buffalo sauce on cauliflower and gently mix around.  Place cauliflower in 9x13 baking dish and cover with panko crumbs.  Place back in the oven to toast the crumbs a bit.  Serve with blue cheese dressing.

Family and Birthdays
My dad's birthday was last week and we celebrated with my parents on Saturday night.  It was low key - we played Farkle and Uno Roboto, ate lasagna and brownie/cookie cupcakes, sang happy birthday and played Chinese Checkers.  I love spending relaxing evenings playing games with my parents and so do my kiddos.

Miss J decided she should dress up for grandpa's "party."  This picture makes my heart happy.
Recent Work Outfit
I am one of those lucky people who get to wear casual clothes to work 90% of the time (jeans and a hoodie are completely acceptable most days).  There are days when we are asked to dress business casual because current or potential new clients are visiting.  We all complain the appropriate amount until someone reminds us of how lucky we are to not have to "dress up" every day.  These pictures were from one of the recent business casual days.

Blue jacket from Goodwill a couple of years ago ($3.29), black and white tank from JCPenny last spring ($20ish?), black pants from Old Navy ($20), red "power" shoes from TJMaxx several years ago ($30ish?), red earrings and red and white polka dot bracelet from FDI Sample Sale, black chunky ring from Walmart ($5), black floral scarf from TJMaxx ($12).

Excuse the poor hand placement.  I'm still getting used to this whole taking pictures of myself thing.

I like this with the scarf because it adds more color to the outfit and I think it brings out the red in the outfit as well as brings all of the colors together.  It was also really cold outside this day.
Pudding
If you've been keeping up with my blog you know that the last two posts had something to do with pudding.  My friend, Dave, sent me a link to this video.


If you need me, I'm on my way to San Franciso... bring on the butterscotch pudding!

I tried the buffalo roasted variety - it was awesome...I want to eat it every day.
